Oh Paula, my thighs say no more

Paula Deen is one genius. Saturday morning we made her delicious pancakes!
I added raspberries to mine, to TRY and make it more healthy. I also didn't use syrup.

Above is her recipe...Isabelle helped me bake and we were all stuffed till lunch time.


After breakfast we went cowboy boot shopping. I found a pair but Jake is still looking. Isabelle yelled loudly at all 3 stores 'I am a cowboy' with different hats on. She was quite the center of attention.



For dinner we splurged on mozzarella sticks with panko bread crumbs. It was my first time cooking with them and I will never go back to regular bread crumbs. I copied this recipe found on Pinterest, and now I can't find the blog from which it originated...so here's what I did.

Low fat mozzarella, sliced. Or low fat Sargentino string cheese cut in half.
Panko bread crumbs
salt
oregano
1 egg (2, if your making more than 6)
Marinara sauce was left over from my pizza sauce

I sliced my low fat mozzarella into thick slices. Then coated each slice in egg then panko bread crumbs. I seasoned the bread crumbs with a dash of sea salt and oregano.
Bake them at 400 degrees for 8 minutes. Delicious!


let's talk FOOD!

Bucca's is an awesome Italian family restaurant in Milwaukee, and I am sure there are some elsewhere...so in missing us some good food I mimicked one of their pizza's.

I used a can of organic, no sodium, roasted tomatoes
3 garlic cloves
2 flat naan breads
low fat mozzarella
fresh basil

Heat the oven to 400. On a pizza stone I warmed the Naan bread for about 7 min.
During this time I pureed my can of roasted tomatoes adding fresh garlic cloves.
Sat that to chill in freezer. Then I sliced mozzarella and tossed my fresh basil in a non stick pan with just a small drizzle of extra virgin o.o.
After removing the flat bread (naan) from the oven I poured a generous amount of sauce down, mozzarella, basil and then baked it.
(I did a little onion but that's totally optional.)

busy bee's

Well it's been busy the last couple of weeks here. I have had physical therapy appointments for Lydia,her 6 month well baby, my own doctor appointment, doing projects/school work with Isabelle in the mornings, and with my new treadmill, these days seem to fly by.
I got a new toy for Valentines Day. An Ipod. Enjoying it immensely, heaven knows how addicted to an Iphone or Ipad I would be, baby steps. :)
This weekend has been all too enjoyable. Between our 70 degree weather and yummy food, well good times here.
Isabelle blessed us again at church this Sunday with asking if she could go to Sunday school. We made a stop at Sam's club after church, definetley prefer Costco over Sam's.
And now both girls are napping, daddy's out on a bike ride, and I just finished laying out on a blanket sun bathing.
Lydia's teething is in full swing...from red cheeks to low fevers, and sleep less nights, I pray they cut SOON.

Smoothie Goodness

Starting to eat healthier, and with that comes new and fun ideas for what I put in my body.So smoothies are my new fun and healthy breakfast. For now it is what I'll eat for breakfast 5 days out of the week.
There are so many simple and easy recipes for blending a good and healthy smoothy.
I chose regular Greek yogurt, frozen blue berries and strawberry/bananas, and spinach.(I didn't buy the low fat yogurt, it had twice as many grams of sodium, more calories, and sugar.)
In my blender I scooped about 3/4 cup of Greek yogurt, a cup of blue berries, and 1/2 cup of strawberry bananas. Next was a small handful of fresh spinach and a splash of milk. After blending it all together I just poured it in a glass and added a purple straw. :) Very good and very filling.

Can I come in?

Super Bowl snacking

Well the day for eating is upon us. No, not Thanksgiving. The runner up to that wonderful day, 'Super Bowl Sunday!'
The hubs shared with me that 1.25 billion wings will be consumed today and 8 million pounds of guacamole will be eaten today. Holy Food Batman! Kind of gross.

So a few things in our house that will be consumed are deviled eggs, bacon wrapped jalepenos, Frank's spicy chicken rolls, and nacho's. Later we may just eat more of my new favorite football soup: Cheesesteak Soup! It's a twist of a philly cheese steak sandwich but soup, ya'll it is G, double 0, D, GOOD!

Let's start with Frank's chicken first. Found a cool recipe for the crock pot. So simple it had to be done! Simply put 4 chicken breasts in a crock pot (frozen or not) add a bottle of Frank's Hot sauce and cook away for at least 2 hours. Shred it with 2 forks, it will fall apart so quick.
If it's thawed chicken add about a cup of water. This is good on a slice of bread, topped on nacho's OR rolled into spring roll paper. You know the stuff used to make homemade egg roles or mozz sticks with? Get our your spring roll paper, gob a spoonful or two of your spicy chicken in the middle add some shredded cheese (your choice of flavor) and maybe some beans, then roll. Black beans would be my choice, but I left them out since the hubs doesn't do beans. Fry them in some olive oil and EAT immediately after cooked.




Next is stuffed Jalapeno wrapped bacon. Heavenly! I slice my jalapeno's down the middle, spoon out the innards, stuff with cream cheese AND pepper jack cheese. With some toothpicks wrap your bacon around pepper and stick it. Bake at 300 till bacon is cooked or grill it. This is a meal in and of it's own sometimes...





So here is the recipe for the Cheese steak soup, and the picture's I took of the cooking process. I am only sharing my pics because I bought my first dutch oven and am so proud of the way it turned out. Let me add that we don't do mushroom's in this casa, so I just took them out of the recipe completely. Could have substituted with green pepper but didn't.
